dc.description.abstract The objective of this work is through a descriptive survey in the Wilaya of Biskra, which has substantial in dates (3.770.000 quintals) production and expertise in processing of dates remains rooted in particular urban inventory populations, inventory and describe food preparations made from dates (craft and household: Rob, Flour of dates, date vinegar, date paste , exudates of date «Honey», flour of kernels of roasted dates «Coffee» , flour of dates and cereals, Makroudh, B’radj, R’fiss,... ) to analyze their process of preparation and to establish their manufacturing diagrams. All of this led us to propose improvements to the process to date, the most recommended products on the market (Rob and flour of dates), according to the population surveyed.
